Vegan Lunch Sammich

Today’s lunch consists of a tofu veggie sandwich and a cucumber salad from work’s cafeteria.

The sandwich was an effort to use up some veggie scraps and have a nutritious lunch. Between 2 slices of Dave’s Killer Bread there is a piece of dry fried and teriyaki smothered tofu, avocado and cucumber slices as well as homemade hummus made from this recipe, topped off with some lettuce. Tomatoes would be good too! Yum!
